Baked Spring Rolls


When we first moved into the new house, I’ll admit we ate more fast food and take-out pizzas than we should have. It was bad for our bodies and our bank account! I’ve started planning out our meals again, which helps me purchase the right things at the grocery store, and gives me time to experiment with new foods that are just as easy to make.

Spring Rolls are always one of our favourite items to eat at restaurants, so I decided to make a baked version instead of deep frying. The trickiest part of this recipe is handling the spring roll wrappers, but after making a couple of rolls you’ll get the hang of it!

Making these pulled pork spring rolls was a piece of cake! I had the pulled pork leftover from the night before, and stuffed my spring rolls with a vegetable mixture before adding the pork. You can make these spring rolls with other meat, with shrimp, or with different vegetables. You can also deep fry them for a delicious treat or serve them without cooking for a more authentic spring roll.

We dipped these yummy spring rolls into Blue Dragon’s Sweet Chili Dipping Sauce & Nuoc Cham Dipping Sauce. My husband loved, loved, loved these spring rolls, but I think next time I’ll try them without baking and add some shrimp to test out a different protein! Let me know how you like them!
