Honey Teriyaki Chicken Stir Fry

Chinese New Year is celebrated on January 31st this year, and 2014 is the Year of the Horse according to the Chinese zodiac. When our family lived in downtown Vancouver, we lived a few blocks away from Chinatown, and I love all the Chinese New Year festivities. The parades were my daughter’s favourite part while I loved the food!

There are many traditions and superstitions when it comes to what to eat on Chinese New Year – certain foods give good luck and others are supposed to give bad luck. Long noodles represent longevity, jiaozi dumplings bring prosperity, while white foods are thought to bring bad luck.

Blue Dragon is an Asian food products company and is named after the Chinese symbol of good fortune. The East Made Easy. The lovely folks at Blue Dragon have provided me with some yummy products to try out. I decided to start with a simple but delicious Honey Teriyaki Stir Fry.

This meal took me about five minutes to prep, and five minutes to cook, which makes it a quick and easy choice for a healthy weeknight meal for the family. It was delicious and sweet, my daughter loved it. However the next time I make it, I would want to use two packages of sauce, as we just found it wasn’t enough for us. We love our sauces over here!

I love a good stir fry because of all the fresh and delicious vegetables. This meal would be just as great with some shrimp or beef instead of the chicken, and I think I would also try it over rice.
