I have no time to cook.
This is not an excuse or an understatement.
During the week we survive on take-out, eating out, or frozen meals, but on the weekends I force myself to cook. In all honesty, I LOVE to cook, and creating a meal for the family that every last one of them can eat with no complaints, well that’s like the gold medal of Olympic family dinners.
But weekends get busy with errands, house repairs, squeezed in work, and impromptu trips to the beach that make everyone hungry for dinner RIGHT AT THIS MOMENT.
I had to think fast and cook even faster, so I threw together this Spanish-Style Shrimp & Sausage Paella recipe. Let’s call it an ‘inspired’ recipe, since I know that this is not a “true” paella by any means, but for this busy mom it tastes the same, with the same great flavours found in Spanish style food.
Cooking on the barbecue is the best thing to do in the summer, isn’t it? I threw some sausage on the barbecue, I would recommend chorizo (my favourite! but not in the fridge!), so I used a farmer’s sausage, and before throwing the shrimp on the barbee, I marinated them in some olive oil, red pepper flakes, Spanish paprika, and salt and pepper.
And I added in corn. Because everyone loves corn, everyone! Except my son. But three out of four ain’t bad, so corn it is.
And then the secret ingredient:
